My Favorite Meal
Breakfast! has got to be my favorite meal when camping or touring in our Palm Beach. The aroma of coffee as it brews in our stovetop percolator hints of the meal to come and helps pull me further away from the beckoning warmth of my recently vacated bed. As you have probably read elsewhere I try to prepare all meals because I have made the galley my responsibility when we are away from home.
Breakfast consist of eggs over-easy on toast with a slice of ham in between. A small glass orange juice and coffee completes the morning ritual of sitting around the dinette table during fall camping or outdoors at the picnic table when the weather permits.
Sometimes I'll include a small portion of hot cereal such as cream of wheat to our fall morning menu. It's a great way of adding carbs, calcium and warmth to sustain us till lunch.
I know, you're thinking eggs equals cholesterol but you are out camping and if you're lucky that might happen every weekend during the 6 months season in the northern parts of the country. That's 48 visible eggs a year, a very acceptable number in my books.
Washing up is easy if you tackle it right away so that the egg doesn't get a chance to harden on the plates. The pot used to cook the cream of wheat is harder to clean as the scalded milk can really bind to the pot.
The "eggs on toast" breakfast becomes a snap to prepare once you get your system figured out. Try making all the toast in advance and kept them warm in a 140-degree oven so that as the eggs complete cooking you can serve it up to your eager family.
